Dolce Lemaire began with one oven and a kitchen that barely held two people. We still bake that way: small batches, long ferments, and flour we can name.
What started as a private habit became a neighborhood bakery. European technique, California grain, and the quiet work of showing up before dawn. We are here for the loaf you pick up on the way to work, the pastry you share at the table, and the cake you order when the day actually matters.

Our Sourcing Philosophy
We mill our thinking around grain. Stone-milled organic wheat from nearby farms, cultured butter from local dairies, fruit when it is actually in season. Nothing is dressed up to look rustic. If it is in the case, it earned the space.

Sourdough loaves take the time they take. Croissants are laminated, rested, and baked until the layers speak for themselves. Cakes are mixed in small lots, not staged for the photograph. Flavor comes from fermentation, butter, and heat - not from a longer ingredient list.
Flour, water, butter, time. That is the whole argument.
