Introduction
Quantum Design International is a food and
beverage consulting and planning group who
offer a comprehensive range of services to senior management in the Tourism and Hospitality Industry. Our services include the review, analysis and recommendation for both the front and back of house requirements within existing operations or future developments in our area of expertise.
Principle Operations
The company is structured in a manner which enables us to provide expert advice to the club industry, institutional market, cook chill industry, international hotel operations and other professional groups which require in depth tourism and hospitality analysis. Our design engineering and marketing staff can assist
clients in establishing economic and market goals. Develop, document and program food production criteria, beverage dispensing, central refrigeration plants, ice bath recirculation, work flow practices, post mix systems. Health and hygiene facility regulations are all within the package we offer our clients to achieve the desired results.

Bruce W. Smith JP, FCSI
Founding Director

Bruce Smith has managed Quantum Design since its inception, bringing together highly experienced staff, resources and external expertise. Prior to joining Quantum Design International Bruce was contracted to TAFE NSW for a period of two years as the Senior F&B Facilities Manager responsible for the development and conversion to the National Core Curriculum. During this time with TAFE NSW Bruce provided lectures on all aspects of facilities design and presented papers which today are used by students in many TAFE courses.
In the period from 1983 to 1991 Mr. Smith was Managing Director of Catering Design Australia, a
company providing consultancy services to Australian and International companies. For a period of ten years prior to this position Mr. Smith held a number of executive positions culminating as General Manager F&B Division of Noyes Bros (Hawker Siddley subsidiary-English).
Bruce currently sits on the following boards and committees:

Foodservice Consultants Society International representing the members within the Asia/Pacific region. The Council for the Professional Standards maintains the standards and member status of all professional members worldwide, ensuring continuous educational growth for all members.

Warren R. Smith FCSI, CFSP
Managing Director

Warren Smith is the Managing Director of Quantum Design International Pty Ltd and senior member of our food and beverage design team providing expertise in high profile food and beverage projects, plant management, OH & S, Hydraulic / Electrical services, master budgeting and cost management.
Warren was responsible for the project management of the commercial food and beverage fit-out on the Sydney Olympic Stadium project culminating in the successful opening of the stadium in 1999.
Prior to Warrens commitments with the Olympic site he was the senior design consultant for Paynter Dixon Constructions (Aust) for five years. Warren commenced his training in the food and beverage industry at Catering Design Australia where he attended the Architectural Draftsman degree course at the NSW University of Technology and TAFE NSW Commercial Kitchen Facilities Design course. After his training was complete at CDA he moved to Commercial Kitchen Consultants (CKC) Group for a period of time.
Warren is responsible for the daily operations of the drawing office, computer aided drafting and ensuring adherence to our design standards for engineering and design / documentation.

Craig Potter
Senior F&B Consultant
Craig has spent many years in United Arab Emirates, Dubai as Senior Foodservice Consultant to many prestigious projects such as Dubai Pearl, Fairmont Hotels, Crown Plaza and Centro Hotels. Prior to living in Dubai, Craig was stationed in London heading up the on site Foodservice Consultancy for Wembley Stadium and other high profile projects. Preceding this period in England, Craig achieved many unique foodservice facility designs with MDA & Associates where he was offered the experience of international design.
As senior consultant within Quantum Design International Craig has blended his vast international experience and personal design flair to our design team. This unique collaboration and combination of abilities has enabled our consulting team to gain an insight into future trends and adopt a vastly superior approach to our foodservice design philosophy.
As part of Craigs responsibilities his team will review and approve all Foodservice Equipment Contractor submittals, foodservice contractor co-ordination, on-site inspections for defect reporting, food safety reporting, foodservice contractor claim reviews, together with operational equipment training and final sign-off certification.

Rod Graham CFSP
Senior Foodservice Consultant
Rod Graham has been a member of Quantum Design International for over 15 years as Senior Foodservice Consultant in all matters pertaining to projects where food and beverage form an essential core to the overall project. Prior to joining our organization Mr. Graham held the position of project manager with Wyvern Services a company well respected in the food and beverage contracting field.
Rod has served his industry well being responsible for projects both within Australia and overseas.
The strength which Rod brings to Quantum Design International is his excellent ability to develop
strategic plans based on corporate mission and vision statements, and to implement and deliver desired outcomes from those plans.
He is attentive to detail from programming through preparation of construction documents, HACCP
planning, and construction administration. Rod is personally involved in every project. Rod commenced his working life within the refrigeration industry where he achieved engineer statues as a refrigeration engineer with Fahey Refrigeration in 1970. Since that time he has actively been involved with the design and installation of many of the foodservice industries major central plants. He also designs, engineers and specifies beer reticulation and glycol chilling plants within our projects.
Rod has a broad practical experience and approach to all aspects of Food & Beverage facilities design with over thirty eight years experience He currently holds a certificate as a Certified Food Service Professional (CFSP) grade II.
Martin Flaxman BSC, DAA
Catering and Menu Planning Consultant
Martins background in the healthcare food service industry spans over 30 years in both the USA and Australia. This experience includes working with the NSW Department of Health as a consultant for seven years.
Martins capabilities include analysis of food service systems, advice for nutritionally balanced menu
planning, kitchen planning and staff training to ensure efficient and hygienic food preparation,
distribution and service.
Part of Martins daily activities is to lias with our design team to achieve a balance between menu planning, required outcomes and kitchen productivity in adhering to the design brief, food safety standards, food premises code of practice for food and beverage facilities engineering and specification documentation.
For those clients that need Martins assistance he is available at competitive industry rates to assist in menu planning, menu costing, staff training, equipment awareness, FF&E procurement, HACCP introduction assistance and ANZFA health regulations.
