Raw honey is honey that has not been heated or pasteurized. All of our honey is 100% pure and natural. Nothing added or taken away.
TYPES OF HONEY
GALLBERRY (also known as Georgia Wildflower) this is the "local" honey that helps with your allergies. Honey that is produced within 150 miles from you is very helpful with allergies.
TUPELO - honey made from the white tupelo gum tree, nyssa ogeche, is top quality table honey and is valued for its uniquely delicious flavor and its inability to granulate.
Tupelo honey is produced in the southeastern United States. Tupelo trees have clusters of greenish flowers, which later develop into soft, berrylike fruits. In southern Georgia and northwestern Florida, tupelo is a leading honey plant, producing tons of white or extra light amber honey in April and May. The honey has a mild, pleasant flavor and will not granulate.
ORANGE BLOSSOM honey is often a combination of citrus floral sources. Orange trees bloom in March and April and produce a white to extra light amber honey with a distinctive flavor and the aroma of orange blossoms. We take our bees to the orange groves in FL every year to get this delicious honey.

For Easier Measuring, Coat the measuring cup or spoon with cooking spray before adding honey.
Honey is sweeter than table sugar. You can use less honey than sugar in recipies for that reason.
The Flavor of Honey depends on where the bees buzzed. In general, lighter colored honeys are milder in flavor while darker colored honeys are bolder.
Store honey at room temperature, not in the refrigerator.
If honey crystallizes or granulates(and most do over time), simply place the honey container in warm water and stir until crystals dissolve.
NOTE: Honey should not be fed to babies less than one year of age. Honey is a safe and wholesome food for older children and adults.

INFO ABOUT LOCAL HONEY:
Honey contains bits and pieces of pollen. Honey as an immune system booster is quite powerful It may seem odd that straight exposure to pollen often triggers allergies but that exposure to pollen in the honey usually has the opposite effect. But this is typically what we see. In honey the allergens are delivered in small, manageable doses and the effect over time is very much like that from undergoing a whole series of allergy immunology injections. The major difference though is that the honey is a lot easier to take and it is certainly a lot less expensive.
