Red Rock Specialty Cheese is a local family owned and operated business. It was established in 2005 by Jon Nilson and Dr. K.M. Nilson. They are both dairy professionals with a combined cheese-making experience of more than 75 years. Red Rock Specialty Cheese is an award winning cheese company specializing in fine Artisan Cheeses made from the highest quality goat and rBST free cow milk.
Jon Nilson
Jon Nilson has gained his cheese-making experience from working in the cheese industry for the past 25 years. While working for Mozzarella Fresca, he brought the business out of bankruptcy. It grew from under $1 million to $50 million in sales in ten years. Through his hard work and diligence he earned ownership of the business. He left Mozzarella Fresca and started Empire Specialty Cheese in Western New York. This business grew to $7.5 million in sales, and then he sold his interest to start working on Red Rock Specialty Cheese in Delta, Utah.
Our Milk
Both our cow milk and goat milk come from Grade A dairies. No animals producing milk for us are treated with rBST (growth hormone). We use only the highest quality ingredients. We do not manipulate the milk to decrease cost as this would sacrifice product flavor, texture, and functionality. We are passionate about producing the highest quality cheeses that can be made. We use both artisan philosophies and scientific testing to ensure that only the highest quality products get Red Rock's name on it.
