La Bergeronnelle Origin: SavoyRegion: Mont Ronjoux, Les Tours, TorméryVariety: 100 % RoussanneMethod: Traditional method; grapes pressed whole, untarnished. The must settles, cold, in steel vats. Slow fermentation at a regulated temperature for 3 to 4 weeks. The malo-lactic fermentation is sought out systematically. After maturation, the wines are clarified by refining, which is followed by light filtration before bottling.Tasting:Beautiful gilded young color. Delicate nose with fruit aromas (apricot, peach, pear). Rich body, full and complex; the palate develops the same aromatic range. Length and smoothness are the signature of this generous wine and grape.Storage: 5 years or more, depending upon the vintage.Serving: To be served between 12 and 14°C. It is complemented by freshwater fish, as well as by poultry with cream sauce, shellfish or foie gras.

Slow fermentation at a regulated temperature for 3 to 4 weeks.The malo-lactic fermentation is sought out systematically. After maturing in oak barrels for 18 months, the wines are clarified by refining, which is followed by light filtration before bottling.Tasting: A gilded yellow, brilliant colour. An intense and complex nose, with notes of roasted vanilla. Elegantly fruity. Frank and generous body with harmonious and delicate aromas of fruits, flowers and vanilla. Smooth and subtle finish with a remarkable persistence.Storage: At least 10 years.Serving: To be served at 12°C. Best served with scallops “au gratin,” pike fish dumplings with Nantua sauce, roasted duck foie gras, shellfish casserole, or with chicken and cream sauce with morels.

La Maréchale Origin: SavoyRegion: Mont Ronjoux, Les Tours, TorméryVariety: 100 % JacquèreMethod: Traditional method; grapes pressed whole, untarnished. The must settles, cold, in steel vats. Slow fermentation at a regulated temperature. The malo-lactic fermentation is sought out systematically. After maturation, the wines are clarified by refining, which is followed by light filtration before bottling. Tasting: Beautiful young color with pale green reflections. The Jacquère grape expresses all its personality and yields a dry white wine with floral notes. The palate is frank and gustatory, leaving a mineral persistence.Storage: 3 years.Serving: To be served between 10 and 12°C. Excellent with an aperitif.It best accompanies seafood, freshwater fish, raclette and Savoyard fondue
La Mondeuse
La Mondeuse Origin: SavoyRegion: Mont Ronjoux, Les Tours, TorméryVariety: 100 % MondeuseMethod, Fermentation: sorting of the grapes and de-stemming, with some grapes pressed whole.Cold pre-fermentation in for 2 to 3 days.Addition of fermenting starter with our own crops. The fermentation takes place in steel vats for 8 to 10 days, amid closely regulated temperatures (25°C) accompanied by frequent tying-up. Separation of the lees, followed by maturation in oak barrels.Tasting: Deep crimson color with purple reflections. Notes of blackberries and spices. Structured palate, generous and silky tannins, beautiful complexity, spiced finish. A wine of character.Storage: 5 years or more, depending upon the vintage.Serving: To be served between 16 and 18°C. Excellent with game, red meat, and cheese, such as Tome des Bauges.

The fermentation takes place in steel vats for 8 to 10 days, amid closely regulated temperatures (25°C) accompanied by frequent tying-up. Separation of the lees, followed by maturation in oak barrels.Tasting: Ruby and garnet colors. Very fine nose, reminiscent of red fruits such as cherries. Fine and delicate palate; silky tannins, beautiful length, slightly roasted finish.Storage: 3 to 5 years, depending upon the vintage.Serving: To serve at 16°C. Enhanced by game fowl, roasted meat and cheese.
