:::COUNTRY QUICHE:::Prep Time: 40 minINGREDIENTS:8 slices bacon1 small onion, chopped4 eggs2 tablespoons milk2 tablespoons all-purpose flour1 teaspoon dried parsley1/4 teaspoon dried thymesalt and pepper to taste1 (9 inch) unbaked pie crust1/4 cup shredded mozzarella cheese1/2 cup shredded Cheddar cheeseDIRECTIONS:1. Preheat oven to 350 degrees F (175 degrees C).2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain (reserving 1 tablespoon of grease) crumble bacon and set aside. Heat reserved bacon grease in skillet and saute onion until soft.3. In a large bowl, beat together eggs, milk, flour, parsley, thyme, salt and pepper. Add bacon, onion, mozzarella and cheddar cheese; mix well. Pour mixture into pie crust.4. Bake in preheated oven for 45 minutes, or until lightly brown on top and firm in the middle. Serve warm.

In a large bowl, beat egg whites. Add milk and bread; let stand for 5 minutes. Stir in the onion, Worcestershire sauce and seasonings. Crumble beef over mixture and mix well.2. Shape into a loaf in an 11-in. x 7-in. x 2-in. baking pan coated with nonstick cooking spray. Bake, uncovered, at 350 degrees F for 35 minutes; drain.3. Spoon ketchup over loaf. Bake 10-20 minutes longer or until a meat thermometer reads 160 degrees F. Let stand for 10 minutes before slicing.

Melt butter in a saucepan over medium heat. Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes, or until quinoa is tender.2. In a bowl, toss quinoa together with garlic, parsley, thyme, salt, and onion. Sprinkle with lemon juice, and serve.

:::MAPLE PANCAKES:::Prep Time: 20 minINGREDIENTS:1 cup all-purpose flour1 1/2 teaspoons baking powder1/2 teaspoon salt1 egg1 cup milk2 tablespoons vegetable oil1 tablespoon maple syrupDIRECTIONS:In a bowl, combine flour, baking powder and salt. In another bowl, combine egg, milk, oil and syrup; stir into dry ingredients just until blended. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown (pancakes will be thin).

:::WALNUT BROWNIES:::Prep Time: 45 minINGREDIENTS:1/4 cup butter6 tablespoons carob powder1 cup white sugar1/4 teaspoon salt1/2 cup all-purpose flour2 teaspoons vanilla extract2 egg white1 cup chopped walnutsDIRECTIONS:1. Preheat oven to 300 degrees F (175 degrees C). Grease an 8-inch square baking pan.2. Melt the butter or margarine over low heat. Pour into large mixing bowl and stir in carob powder, sugar, salt, flour, and vanilla. Mix in egg whites and walnuts. Spread the dough evenly into the baking pan.3. Bake for 30 minutes. Let cool in pan for 10-15 minutes before cutting.
