PRODUCT SHOW RULES
1. WHOLE BONE-IN HAM--Ham must contain aitch bone, leg bone, and a portion of the shank bones. No skin on hams or semi-boneless hams are allowed.
2. BACON--must be a minimum of six pounds of standard approved trim: Not cut or sliced.
3. WEINERS or SMALL DIAMETER SAUSAGE--must be made with beef or pork and fully cooked as destribed in USDA/FFIS Appendix A*. Entries must include six liks less than 28mm diameter. No colored casings allowed.
4. DRIED BEEF--must be single piece of whole muscle; ie. Clod or round left whole after cooling or smoking.
5. COOKED SUMMER SAUSAGE--must be fully cooked as described in USDA FFIS Appendi A*. Entry must be whole stick, not cut or sliced; with the orginal string attached. No colored or printed casings allowed.
6. JERKY--must be all beef, whole muscle, shelf stable, and ready to eat. Entries must weigh a minimum of 1/4 lb.
7. BEEF STICKS--Entries must be shelf stable and ready to eat. Minimum of 1/4lb. Non-colored casings, 22mm or smaller. Must be all beef.
8. COUNTRY STYLE SAUSAGE--must be made of beef and/or pork, stuffed into 42mm or less casings and cooked as described in Appendix A*. No colored casings are allowed and one ring sample is required.
9. SPECIALTY COOKED ITEM--open to any unique and / or unusual fully cooked item.
10. SPECIALTY UNCOOKED ITEM--open to any unique and / or unusual sausage or cured item.
