Thompson-Anderson became fascinated by this new world, and soon began taking cooking classes.By the time her husband was transferred to Louisiana in the early 1970’s she was hooked on cooking and began teaching at a small cooking school/cookware shop in Covington, Louisiana. Through the owner of the school, Thompson-Anderson met Nathalie Dupree, who sponsored her as a Charter Member of the IACP (International Association of Culinary Professionals), through which she earned the CCP (Certified Culinary Professional) designation. After studying with Dupree, Thompson-Anderson studied professionally in Maryland, New York City, and Napa Valley. Furthermore, she had the privilege to spend a week of intensive study with James Beard at the Stanford Court Hotel kitchens in San Francisco shortly before his death.Thompson-Anderson founded her own cooking school, Cooking Inc., in Lafayette, Louisiana in 1979. The school was featured in Bon Appetit magazine, which drew requests from students all over the U.S. and Europe. It also brought requests for her to train staffs in restaurant kitchens throughout the U.S. Furthermore, living in South Louisiana offered Thompson-Anderson the opportunity to network with many local chefs and food personalities, including legendary Cajun chef Paul Prudhomme and current culinary star Emeril Lagasse, who was then the chef at world-renowned Commander’s Palace. In 1991 Thompson-Anderson moved back to her childhood home of Houston, where she accepted the position of Executive Chef with Halliburton Corporation. She held that position until 2004, when she moved to Fredericksburg, Texas to launch a line of food products that are still produced and marketed by Fischer & Wieser Specialty Foods, Inc., and based on recipes from her cookbook “Texas on the Plate.”In addition to “Texas on the Plate,” she has authored “Cajun-Creole Cooking,” which was heralded as “the best Cajun-Creole cookbook on the market” by the Los Angeles Times, “Eating Southern Style,” “The Texas Hill Country” and the upcoming “Lone Star Eats,” which will be available in October, 2011. Thompson-Anderson also adapted more than 100 recipes that are included in “Don Strange of Texas: His Life and Recipes” for the home kitchen. Thompson-Anderson has written for local and national publications, including Bon Appetit, Cook’s Magazine, Cuisine, Food & Wine, and Food Arts. She remains a member of the IACP, the Southern Foodways Alliance, the prestigious Les Dames d’Escoffier and The Wine Society of Texas.
