Using the finest couverture allows me to deliver through a more simple, honest back to basic approach, because the taste of these chocolates speak for themselves. I add no extra sugar or fats to the couverture enrobing your chocolates, which are bursting with rich, luxurious natural flavour. And source flavoursome natural & fresh ingredients for the fillings & flavours. I discovered through years of taste research; Cacao Barry established 1842 and Barry Callebaut ranges of couverture (www.cacaobarry.com and www.callebaut.com) using various couverture from there ranges, including single origin & plantation, I am constantly evolving Gigi's offerings. When the Spaniards first took chocolate home from the Aztecs they used it as medicinal and considered a health food, even the church approved it as a nutritional supplement to be used during fasting! We have come a long way since the 1500's however eating good high cacao content chocolate in moderation is uplifting and good for you, when incorporated into a balanced diet and balanced lifestyle.
