Puebla is a place full of history and magic but, above all, enriched by its culinary background. This city is where the prehispanic and Hispanic ingredients came together. Because of that,, Pueblas gastronomy is one of the largest of our country, and it is our great pleasure to show it to you. Get ready, because youre about to start an amazing journey and an unforgettable experience through gastronomy, history and tradition of a city that today shows to the world the results of breathing the mixing of cultures and the fusion of flavors.•Day One:In the evening, well have the pleasure to take you to one of the most dedicated restaurants to recover the ancient and traditional recipes of Mexican cuisine. With the proper marriage of food and wine, we´ll learn about the cuisine of Cue Family, whose mix of influences between Pueblas and Spains cuisine delivers on of the most exquisite menus in the whole state. We´ll do this while we discover the history of the place, the painting that gives its name to it and the local people that are depicted there. •Day Two:After breakfast, we´ll head to a first cooking class here you will not only have fun, but youll also learn to cook one of the most traditional dishes, as well as some of the pre-hispanic techniques that make something unique out of Mexican gastronomy. Remember: our goal is to rescue the most ancient recipes and teach them on an academic chat that will take you either to indigenous or to colonizers world. Your guide through this will be the experienced chef and guide expert, in a warm and friendly environment. Youll be surprised with the dishes youll be able to cook, the classic Chiles en Nogada (Chilis on Walnut Sauce). The main star in this dish is the local Chile Poblano, filled with finely chopped beef, nuts and fruits covered in walnut and pomegranate sauce. This dish was created in the XVII Century and is one of the main characters in the gastronomic scenery of Puebla all around the world. After this culinary experience, theres nothing like a tour through history and architecture of this wonderful city. Youll be able to appreciate in a unique way the majestic Cathedral and its surroundings, as well as the Palafoxian Library, one of the crown jewels of this city and part of the Cultural Heritage of Humanity sites that Puebla has to offer. Well also take you to the famous former Convent of Santa Rosa, a place in which time appears to be stopped and ready to tell us and show us how the XVIII Century nuns lived. In its museum well see some of the 7 different regions of Puebla, its ethnicities and cultures. But, most important, well show you one of the most important kitchens of that time, preserved in its original form. Built entirely in talavera, it reveals us the antique techniques of mexican cuisine, as well as the most ancient recipes. You can breath history in this place and feel the energy that, hundreds of years ago, feed the fire and the food that was prepared in here. This is a main step of our visit.Well go the the traditional crafts market El Parián and witness the architecture of the famous House of Alfeñique, a building which ows its name because it looks like its made from Alfeñique, a traditional white candy made of sugar and very famous in colonial and onward times. Visiting the Forts is another must in this trip. •Day Three:After a delightful breakfast, our next step is Puebla sister city: Cholula, the city where the vice regal and prehispanic history came together. Well learn the role this region and its people had in the Spanish colonization and well visit the Cathedra Hernán Cortés ordered to build in the top of a pyramid which, to many experts in the matter, is one of the biggest cathedrals in the whole continent. Grab your camera and take an amazing picture of it, with an spectacular sightseeing of Popocatépetl volcano, kindly named by the locals as Don Goyo. Finally, well get to OaxacaWelcome to the beautiful city of Oaxaca, state capital and located on the Southern Mountain Range, with a subtropical weather and the calmness of the valley, reasons both for attracting tourists into Oaxaca.Get ready, because youre about to start an amazing journey and an unforgettable experience through gastronomy, culture and tradition of a city recognized by UNESCO as a Worlds Heritage Site due to 3,000 years of history. This special culinary trip has been created so you can learn, before getting into the kitchen, the traditions and legends of Oaxaca, so you can understand and get an inside look of what led to the creation and magnificence of this states gastronomy, now famous all around the world as the cornerstone of Mexican cuisine.Upon your arrival, we will receive you at the airport and take you to your choice of Boutique Hotel. He is known and recognized for his techniques and the fusion of flavors and textures to create a true modern Oaxacan cuisine. Among his creations, well taste his Red Snapper Ceviche with Mango and Passion Fruit Sauce. His vision and way to enjoy life itself is transferred to his cuisine with a taste of freshness, comfort and joy in the kitchen. With Him we will visit on of the biggest markets of Oaxaca, where He will guide us to shop the freshest ingredients for our later class in which we will transform with His expert guidance, those ingredients into dishes with intense flavors. With the proper marriage, well taste our food traveling in time to understand how these recipes came to be and the importance they had on our history and culture. •Day Five:After a good breakfast, it is necessary a visit to Teotitlán del Valle, a little town where the best wool carpets are made. We will visit a family workshop with 50 years of tradition. Everything that is produced there, such as carpets, shawls and other wool pieces are handmade, using prehispanic techniques to achieve the knitting and then its dyed with natural ingredients. If youre looking for handicrafts for your home, this is the place where youll get that thing your friends and families are going to love. This culinary trip wouldnt be complete without visiting zapoteco´s cuisine, where its owner, one of the top chefs in Oaxaca who, after taking us to the local market, will guide us through her kitchen and teach us to prepare a 5 course meal with traditional ingredients and recipes from this state that well enjoy afterwards as we do a special Mezcal tasting with the best regional varieties of this distillate that is taking over the world as a quality beverage from Mexico.What better way to enjoy the afternoon with a visit to the study of an artist who showed us the wonders that are created from textile art and not just be seen as mats that are experts in this place, His art stands out among other, through fantastic visual language that dominated plants and animals figures, richly adorned with smaller designs and inserted into the decorative. As the setting for this culinary experience the Chef has chosen in the open kitchen where the kitchen while enjoying itself, the beauty of the Oaxacan countryside 600 years ago settlers who conquered and conquer you.At the evening well walk the streets of Oaxaca and go to the stores where products from different regions are sold. Then, well visit the amazing Santo Domingo Cathedral, a perfect example of the Baroque architecture of Novo Hispain. The first constructions of this place go back to 1551, year in which the Oaxaca city council gave to the Dominic Order twenty-four lots for the construction of a convent. However, it wasnt until 1608 that the Convent of Santo Domingo was opened, even when it was unfinished. Well go to Oaxacas Crafts Market, next to city downtown. Here we can appreciate craftsmanship and products from oaxacan culture and regions. Then, its time to go food shopping. Well know about the regional fruits and vegetables and well have a tasting of local dishes as tlayudas, the amazing mole and others cooked and created in the very heart of the city.Finally, youll get the rest of the afternoon free so you can enjoy and discover by yourselves everything that Oaxaca has to offer. •Day Seven:Well end our trip with a delicious breakfast. Michoacan is unique, rich in typical towns, natural beauty, its art and culture. Because of that, it is recognized for its historical, cultural and craftsmanship value as the soul of Mexico.Here is where the invincible Purepecha Empire was born, an Empire that conquered and extended its dominion throughout the center region of the country. These days, you can enjoy the cultural legacy of this empire visiting both the archeological sites as well as every town located at the bank of Patzcuaro Lake, the Purepechan Upland, the Zacapu Marsh and the Eleven Town Glen, all of which inherited the Purepechan festivities, customs, music, dances, gastronomy and crafts. Today we can admire great and magnificent civil and religious buildings of great architecture in Morelia and every village of this state. The syncretism in which the purepechan prehispanic origins and the Spanish colonization, gave birth to a cultural diversity where the popular art of MIchoacan highlights with great merits.•Day One:Michoacán will welcome us while we’re still on the road, with a majestic view of the second largest lake in this country; the Cuitzeo Lake. We’ll arrive to the town of Cuitzeo, surrounded by the lake itself where we’ll have the first stop in this journey to walk the streets of this Magical Town – named like that by the Tourism Ministry in 2006 due to the viceregal architecture and dreamed landscapes. Cuitzeo – “Place of Jars” in Purepechan language – is ready to surprise us with the Convent of Saint Mary Magdalene, an Augustine convent built in the 16th Century and witness of the advance that the Convent Missions for Michoacán and bound to the history of the town, as its date of built is also celebrated as the foundation of the town of Cuitzeo. Our next step is Morelia, state capital of Michoacan. We’ll check in at the Hotel Boutique Los Juaninos, cataloged by the Anthropology and History Institute and restored in 1988, this building is located at the historical downtown of Morelia and, therefore, key piece for UNESCO’s World Heritage Site designation. With a great location just across the main plaza where the City Cathedral stands as the center point of this city, Los Juaninos Hotel is a one of a kind venue for respecting the original plans of the building and adapting correctly the lodging experience to them.On of the main pleasures of Michoacan is experienced at the table, as the gastronomy of the state is one of the most diverse and exquisite around the country. Tarasca Soup, Purepecha Soup, Chocolate from Metate Soup, Black Atole, Grain Atole, White Fish from Pátzcuaro and Corn Corundas are some of the most traditional and prehispanic dishes from this region. To fully enjoy all of this, there’s no place better than Los Mirasoles, restaurant owned and founded by the Figueroa family where, among the dishes, talks and another cataloged mansion part of city downtown, we’ll have a special tasting of the main recipes of this cuisine.Walking through Morelia, once called Valladolid, means traveling in time to the colonial times. The religious intensity is present in the magnificence of the Cathedral, built with pink quarry stone, and a focal point for the landscape of this city, as well as for every temple and church around the city.Morelia has beautiful colonial buildings such as the Aqueduct with 253 arches – built in the 18th Century – and beautiful gardens traced after the French radial norm. The Clavijero Palace; the Roses Conservatory and the Saint Nicolas Hidalgo College, where Miguel Hidalgo was principal and Jose María Morelos was a star student, are some of the most emblematic and historical locations of this city. We’ll finish our walking tour at the Candy Museum, also the oldest candy factory in Mexico, established since 1840. Here, among walls, showcases and rooms with more than 300 different candies, the staff strengths the time travel feeling dressed like it was custom in the late 19th and early 20th century. We’ll learn the story behind these delights, how they were created by nuns in the local convents and, as time went by, these recipes were perfected inside those city mansions into a true art for creating ates, fruit stripes, sugar rails, the arrayán, and the famous burnt milk marbles.Finally, you’ll get the rest of the afternoon for yourself and, for those who want it, we have prepared a special evening for you to have a tasting or a welcome drink enjoying the spectacular view of the Cathedral from this venue.•Day Two:We’ll start our day with a tour through the towns and artisans communities around Patzcuaro Lake. We’ll go to San Jerónimo Purenchécuaro and their wicker crafts, San Andrés Tziróndaro, San Francisco Uricho, unique place for carved wood products and Erongarícuaro and Jarácuaro, famous for the hand knitted hats.Then in this exciting day, we’ll go to Patzcuaro, heart of the lacustrine zone and one of the most important locations at Michoacan, as it was the main religious prehispanic centre, as the locals believed that the place was the pathway where gods came down and return to heaven. But first, we will have our special tasting at the restaurant El Patio, with local and typical dishes of this region of Michoacan.After that, we’ll go to one of the main venues of this town. The House With Eleven Courtyards, an ex-convent for Dominican nuns, built in 1742 where we can buy a wide variety of regional crafts. We’ll enjoy the shawl and lacquer loom, where master craftsmen use their huge imagination to create indescribable products. Then, the main temple at Patzcuaro: Lady of Health Church, the resting place of the first Bishop of Michoacan Vasco de Quiroga and also the place where we can find the Health Virgin, patroness of this region represented in cornstalk paste back in the 16th century.After knowing the ExConvent of St. August, where the famous wall paint of Juan O’Gorman shows the history of Michoacan, we’ll walk Vasco de Quiroga Plaza, one of the most beautiful plazas in America where, during these festivities of Day of the Dead, hosts a local artisan public market to show and sell pieces from all over the state.We’ll return to Morelia for a special dinner, where we’ll taste dishes prepared specially for the occasion using ingredients related with this Holiday, such as the Cempazuchitl flower. •Day Three:It is a must to visit Santa Clara del Cobre, important artisan centre for copper products, recipients for candy preparations, casseroles, plates, vases and a wide variety of decorating products. We’ll go to a workshop where we’ll learn the process and techniques to create these objects. Then, before we continue, you’ll have the opportunity to visit some of the best stores for these products. Just 8 miles away is the Zirahuen Lake, a deep blue place surrounded by a pine-tree forest. There’s nothing better than a special tasting watching the magnificent view of the lake so we can relax and prepare for the biggest night of this trip, where we’ll live closely the traditions and celebrations of Day of the Dead in Michoacan.In Santa Fe de la Laguna lays our next step. This community, the first Hospital Town founded by Vasco de Quiroga in 1533, keeps alive the culture and traditions of the purepechan communities. The women from this place walk the streets wearing the traditional ceremonial clothing and all of the inhabitants work the clay pottery to create amazing pieces of art painted by hand with a huge variety of forms and colors. During these celebrations, Santa Fe hosts an artisan market in the main plaza, so we’ll be able to appreciate and enjoy the local products and the amazingly created shawls that these women wear with pride for their traditions.Then, local women will cook for us an authentic purpechan dinner with recipes, ingredients and techniques with hundredths of years of history that will make us taste Michoacan’s flavors in a unique and unrepeatable way.By night, we’ll witness the traditional altars that these families rise in honor of their passed ones. They even have a local contest for the most beautiful altar in this celebration. Then, we’ll be part of the pilgrimage from house to house to see the private altars of this community. •Day Four:We finish our trip with breakfast and check out from the hotel. Its majestic buildings, museums, villages and streets have a piece of this history that is common to all.The area of historic Santiago de Queretaro is World Heritage since 1996. On this tour we will visit the Aqueduct and the history of Marquis Who financed it, the convent of Santa Cruz and the mysterious bones which grow there, the house of the township, the Theatre of the Republic and the Cerro de las Campanas.A tasting dinner awaits where you can feel and be our first encounter with Queretana cuisine, dishes from traditional recipes with contemporary presentations delight us before going to bed.•Day Two:For our first culinary adventure we will go to Peña Bernal Discover the fascinating process of making crafts, wines and cheeses Queretaro on a tour one of the most beautiful regions of the state. Meet the third largest monolith in the world, Peña de Bernal, in her lap, wrapped in a magical town tradition, where colorful textiles manufactured in ancient looms. Right there, try the delicious corn gorditas broken.Following the provincial atmosphere, come to the picturesque town of Tequisquiapan to enjoy a meal under the arches of the peaceful main square, which also offers a variety of handmade baskets.
