We pride ourselves on our original Mexican food and our original puffy tostados. We are the only restaurant in Fort Worth or Dallas to offer this unique style of preparation. My mother, Modesta Caro, created the recipe for our tostados when she opened the first Caro's in Rio Grande City, Texas in 1937. Our tostados are made to order. They do not come out of a box or from a mix. Freshness and quality of our ingredient's are of utmost importance to us. Caro's has been owned and operated by the Whitten family since 1954 in Fort Worth but is as old as the Aztecs with our recipes for Mexican food. Enjoy!

THE HISTORY OF OUR SALSA
In 1937 Modesta Caro was left with the task of supporting herself and her children. Modesta took to the one thing she new best, food. She took advantage of the recipes that had been passed down to her by her mother, the same which had been done for generations. She pulled the money she had together and opened the first Caros Restaurant of Rio Grande City, TX in 1937. Through the years that she operated the restaurant she carried on the family tradition and taught her children all there was to know about her recipes.
All of her teaching came in handy to one of her daughters Lou Caro-Whitten in 1954 when she and her husband opened her very own Caros in Fort Worth, TX in 1954. Lous style of running the restaurant was very similar to her mothers. She spent the time and taught her children all the recipes for the food they made. Of all her children one really took it to heart.

Rio Grande City 1947
In the late 1980s John Day Whitten Jr. stepped in to take over the family Business. John continued the time honored traditions of his family. He kept secret all of the families recipes. Such recipes as Puffy Tostadas and Tacos and especially the Green Salsa or as it is know better, Salsa Verde. John takes great pride in and is widely known for his salsas. Over the years John has capitalized on his familys recipes and even improved them. He is so well know for his authentic Mexican food that it has earned him a nickname exclusive to him, Puff Taco Daddy after the Puffy Taco creations that he produces in his restaurant.
This is why we present to you today Puff Taco Daddys Fine Salsas. John has taken great care in the production of these products. Both are which are enriched and defined by not only his own personal style but built upon recipes that are well over 100 years old.

Now, there is a lot to say about The Drunk Cowboy Sauce This recipe has gone through many transitions throughout the years. It is the finalization of over 25 years of development.
The truth is that it was put into motion at the request of a restaurant patron. One evening while he was dining in Johns establishment he piped up from under his cowboy hat and handle bar mustache and told John that his Green Salsa was simply not spicy enough. He wanted something hotter, and hotter he got.
John went straight to the kitchen and made him a batch of what now is called his Drunk Cowboy Sauce. When John delivered it to the table the customer scooped some up and put it in his mouth what quite possibly could have been his last meal. The events that followed brought a smile to Johns face. The sauce had stunned his customer left him absolutely speechless and brought sweat to his brow. This should be a lesson to other, be careful what you ask for.
