16oz CREAM CHEESE
1/2 cup CHOPPED GREEN ONION
1 tsp. WORCESTERSHIRE SAUCE
1 dash GARLIC POWDER
CHOP HAM IN VERY SMALL PIECES. MIX 2/3 HAM WITH SOFTENED CREAM CHEESE, GREEN ONIONS, WORCHTERSHIRE SAUCE AND GARLIC POWDER. FORM INTO BALL AND ROLL IN REMAINING HAM. REFRIGERATE UNTIL FIRM. SERVE WITH YOUR FAVORITE CRACKERS.

CREAM CHEESE, SOFTENED
CAN OF CREAM STYLE CORN,
UNDRAINED
1 (15oz)

CANS OF MEXICAN STYLE
CORN, UNDRAINED
BOXES OF CORNBREAD MIX
1 cup
GRATED CHEDER CHEESE
1/4 stick
BUTTER, MELTED
PREHEAT OVEN TO 375 MIX CREAM CHEESE WITH BOTH KINDS OF CORN. STIR IN CORNBREAD MIX. POUR INTO A 13 X 9 BAKING DISH AND TOP WITH BUTTER. BAKE FOR 40 MINUTES. REMOVE FROM OVEN AND TOP WITH GRATED CHEESE. BAKE UNTIL CHEESE MELTS.
YOU MAY ADD CHOPPED JALAPENO PEPPERS FOR AN EXTRA ZING.

1/2 lb BOUDAIN, TAKEN OUT OF THE CASING
6oz SEAFOOD SALAD
6 SLICES OF PEPPER JACK CHEESE
6 TEXAS COUNTY COOKERS RIB RUB
6 PORK LOIN CHOPS CUT 1 1/4 INCH
THICK
MIX BOUDAIN AND SEAFOOD SALAD TOGETHER, SLICE A POCKET IN THE SIDE OF EACH PORK CHOP. PUT ONE SLICE OF CHEESE INTO THE POCKET. STUFF EACH PORK CHOP WITH AN EVEN AMOUNT OF THE BOUDAIN AND SEAFOOD SALAD MIX. SEAL WITH TOOTHPICKS. SPRINKLE WITH TEXAS COUNTRY COOKERS RIB RUB.
PREPARE BBQ GRILL FOR HIGH HEAT. GRILL CHOPS FOR 30 MINUTES, TURINING ONCE, OR UNTILL COOKED THROUGH, BUT NOT DRY.
